Abstract: | This research aims to 1) study local food in Aranyaprathet subdistrict, Aranyaprathet district, Sa Kaeo province, 2) study opinions on local food in Aranyaprathet subdistrict, Aranyaprathet district, and 3) develop local food in Aranyaprathet subdistrict. This qualitative research was conducted using interviews observation and focus group discussions. Data collection tools included interview forms and focus group discussion topics. The study participants were residents of Aranyaprathet subdistrict, Aranyaprathet district, Sa Kaeo province. A probability sampling technique was used to select 30 participants. The results of the study found that 1) local food of the Aranyaprathet subdistrict community Aranyaprathet District Sa Kaeo Province Influenced by various cultures Because the area is located on the Thai-Cambodian border, the local population includes Thais, Laotians, Vietnamese, Cambodians, and Chinese living together. Local food therefore combines the food cultures of all five nations. Examples of local food from the Aranyaprathet subdistrict community include Vietnamese noodles, coconut milk noodles, Khmer orange soup, glass noodle salad, nam nueng, Khmer papaya salad, etc. 2) Opinions about local food of the Aranyaprathet subdistrict community. It was found that the food that people in the community eat the most are Vietnamese noodles, namnueng, and coconut milk noodles. 3) Development of local food of the Aranyaprathet subdistrict community. It was found that the development guidelines include preserving and perpetuating local wisdom. Collection of traditional recipes Passing on knowledge to the new generation organize activities to promote learning Organize food tourism routes organize cooking demonstration activities Developing local food in the Aranyaprathet subdistrict community is important. Help unique communities generate income. and attracting tourists as well as making people in the community feel proud and cherish local food to remain with the community forever. |
