Abstract: This research aimed to study topic proportions, structure, and characteristics in Japanese textbooks for hotel work. The target groups were 11 Japanese textbooks for hotel work in Thai language published during the year 1999-2022 and analyzed the structure of these textbooks by using Gagne's Conditions of Learning theoretical framework. The study found that the most common topics were telephone service, followed by topics related to receptionists. There was not much difference in the structure of textbooks. In each book, new content will be presented. and new tests of knowledge appeared. Most of which were comprehension skills and speaking skills exercises. However, the study found that in Japanese textbooks for hotel work, chapter objectives and review of previous knowledge were not explicitly stated. In addition, in practice, it was found that there are only few textbooks that propose exercises on practical skills.
